Honey Mustard Chicken with Roasted Asparagus and Cheese

Ingredients:

For the Chicken:

  • 2 chicken breasts (boneless, skinless)
  • 2 tbsp Dijon mustard
  • 1 tbsp yellow mustard (optional for extra zing)
  • 1.5 tbsp sugar-free honey substitute (like ChocZero or Sukrin)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1/2 tsp paprika (optional for a smoky kick)

For the Roasted Asparagus & Cheese:

  • 1 bunch of fresh asparagus, trimmed
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1/2 cup shredded mozzarella or cheddar cheese

Instructions:

1. Prep the Honey Mustard Sauce: In a bowl, whisk together Dijon mustard, sugar-free honey, garlic powder, paprika, salt, and pepper. Taste and adjust seasoning if needed.

2. Cook the Chicken:

  • Pound chicken breasts to even thickness.
  • Heat 1 tbsp olive oil in a skillet over medium heat.
  • Sear chicken for 4–5 mins per side until golden and cooked through.
  • Lower heat and pour the honey mustard sauce over the chicken. Let it simmer for 2–3 mins, coating the chicken well.

3. Roast the Asparagus:

  • Preheat oven to 400°F (200°C).
  • Toss asparagus with olive oil, salt, and pepper.
  • Lay on a baking tray and roast for 10–12 minutes.
  • Remove from oven, sprinkle cheese over asparagus, and return to oven for 2–3 more mins until melted and bubbly.

4. Plate and Serve: Serve the juicy honey mustard chicken with cheesy roasted asparagus on the side. Drizzle extra sauce over everything if you like!
