Honey Lemon Ginger Tea by Amelia

I ordered honey, lemon, and ginger tea at a coffee shop in Hartford one cold winter day. It was tart, sweet, full of flavor, and warmed me from head to toe. The proprietor was nice enough to give me a rough description of her recipe. After a few tries at home, I came up with this close version.

Ingredients
Original recipe (1X) yields 6 servings
- 4 cups water
- ¾ cup brown sugar
- ¼ cup grated ginger root
- 3 tea bags
- 2 lemons, juiced
- 3 tablespoons honey

Directions
- Stir water, brown sugar, and grated ginger root together in a saucepan; bring to a boil, then reduce the heat to medium-low and cook at a simmer for 20 minutes.
- Remove from the heat and add tea bags. Steep tea to desired strength, 3 to 5 minutes. Remove and discard tea bags.
- Stir lemon juice and honey into the tea, then strain into a pitcher.
