Ingredients (1β2 servings)
Chicken
- 200 g cooked chicken breast, shredded or diced
- 2 tbsp buffalo sauce
- 1 tbsp honey
- 1 tbsp ranch dressing (or ranch seasoning + yogurt)
- Β½ tsp garlic powder
- Β½ tsp smoked paprika
- Salt & black pepper to taste
Base
- 1 cup cottage cheese (high-protein, full-fat or low-fat)
Toppings (optional but recommended)
- ΒΌ avocado, diced π₯
- 2 tbsp diced cucumber
- 2 tbsp diced tomatoes
- 1 tbsp chopped green onions
- 1 tbsp shredded cheddar or mozzarella
- Drizzle of extra ranch or buffalo sauce
Instructions
- Prepare the chicken
- In a bowl mix buffalo sauce, honey, ranch, garlic powder, paprika, salt, and pepper.
- Heat the chicken
- Add cooked chicken to a pan over medium heat.
- Pour the honey buffalo ranch sauce over it.
- Stir and cook 2β3 minutes until warm and coated.
- Build the bowl
- Add 1 cup cottage cheese to the bowl as the base.
- Spoon the warm honey buffalo ranch chicken on top.
- Add toppings
- Sprinkle avocado, cucumber, tomatoes, green onions, and cheese.
- Finish
- Drizzle extra buffalo or ranch if desired and enjoy.
