Honey Buffalo Ranch Chicken Cottage Cheese Bowls

Ingredients (1–2 servings)

Chicken

  • 200 g cooked chicken breast, shredded or diced
  • 2 tbsp buffalo sauce
  • 1 tbsp honey
  • 1 tbsp ranch dressing (or ranch seasoning + yogurt)
  • Β½ tsp garlic powder
  • Β½ tsp smoked paprika
  • Salt & black pepper to taste

Base

  • 1 cup cottage cheese (high-protein, full-fat or low-fat)

Toppings (optional but recommended)

  • ΒΌ avocado, diced πŸ₯‘
  • 2 tbsp diced cucumber
  • 2 tbsp diced tomatoes
  • 1 tbsp chopped green onions
  • 1 tbsp shredded cheddar or mozzarella
  • Drizzle of extra ranch or buffalo sauce

Instructions

  1. Prepare the chicken
    • In a bowl mix buffalo sauce, honey, ranch, garlic powder, paprika, salt, and pepper.
  2. Heat the chicken
    • Add cooked chicken to a pan over medium heat.
    • Pour the honey buffalo ranch sauce over it.
    • Stir and cook 2–3 minutes until warm and coated.
  3. Build the bowl
    • Add 1 cup cottage cheese to the bowl as the base.
    • Spoon the warm honey buffalo ranch chicken on top.
  4. Add toppings
    • Sprinkle avocado, cucumber, tomatoes, green onions, and cheese.
  5. Finish
    • Drizzle extra buffalo or ranch if desired and enjoy.
