Fresh Homemade Diabetic-Friendly Salsa

Ingredients

  • 2 cups fresh diced tomatoes
  • ¼ cup finely chopped onion
  • 1 small jalapeño (seeded if you prefer mild)
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped cilantro
  • 1 clove garlic (minced)
  • Salt to taste

Instructions

  1. Mix all ingredients in a bowl.
  2. Let sit 20–30 minutes in the fridge for best flavor.
  3. Stir and serve.
