Homemade Lentil Stew

Ingredients:

  • 1/2 an onion, chopped
  • 3 carrots, peeled and diced
  • 2 stalks celery, sliced
  • 3-4 potatoes, peeled and cubed
  • 8 oz of lentils, rinsed and drained
  • 6 cups of water
  • 1 1/2 tablespoons of Better than Bullion, vegetable
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  • In a large pot over medium-high heat, sauté the onion, carrots, and celery for about 10 minutes, stirring occasionally, until soft and golden.
  • Add the water, Better than Bullion, potatoes, and bay leaf and bring to a boil.
  • Add the lentils and reduce the heat to low. Simmer, covered, for about 30 minutes, or until the lentils and potatoes are tender.
  • Season with salt and pepper to taste and remove the bay leaf.
  • Enjoy your lentil stew with some bread or crackers, or as a meal on its own.
