Homemade Hamburger, Peppers, and Onion Gyros

Ingredients:
1 lb lean ground beef or turkey
1 tablespoon olive oil
1 large onion, thinly sliced
1 bell pepper (any color), thinly sliced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Whole-grain or whole-wheat pitas or flatbreads
Tzatziki sauce (store-bought or homemade) for serving
Fresh vegetables, such as tomatoes and lettuce, for garnish
Instructions:
In a large skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and minced garlic. Cook until the vegetables are softened and slightly caramelized.

Push the vegetables to one side of the skillet and add ground beef or turkey. Cook until browned, breaking it apart with a spatula.

Season the meat and vegetables with ground cumin, smoked paprika, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes until well blended.

Warm the pitas or flatbreads according to package instructions.

Assemble the gyros by placing a generous amount of the meat and vegetable mixture onto the center of each pita. Top with fresh vegetables and drizzle with tzatziki sauce.
