🍞 Homemade Gluten-Free Vegan Bread

🧾 Ingredients


2 1/4 cups gluten-free flour blend (with xanthan gum*)

1 cup almond flour (adds softness & flavor)

1 tbsp ground flaxseed + 3 tbsp water (flax egg)

1 tbsp baking powder

1 tsp salt

1 tbsp maple syrup (or agave/sugar)

1 tbsp apple cider vinegar

1 1/2 cups warm water (around 110°F or 43°C)

2 1/4 tsp (1 packet) active dry yeast

*If your gluten-free flour blend doesn’t contain xanthan gum, add 1 tsp separately.

🥣 Instructions

  1. Prepare Flax Egg:
    Mix flaxseed with water and set aside for 5 minutes to gel.
  2. Activate Yeast:
    In a small bowl, mix warm water, maple syrup, and yeast. Let sit 5–10 mins until frothy.
  3. Mix Dry Ingredients:
    In a large bowl, combine gluten-free flour, almond flour, baking powder, salt, and xanthan gum (if needed).
  4. Add Wet Ingredients:
    Add the flax egg, apple cider vinegar, and frothy yeast mixture to the dry ingredients. Mix well (dough will be thick and sticky — more like a thick batter than traditional dough).
  5. First Rise:
    Transfer the dough to a greased loaf pan. Smooth the top with a spatula.

Cover and let it rise in a warm place for about 1 hour, or until it has noticeably puffed up.

  1. Bake:
    Preheat oven to 375°F (190°C).

Bake for 50–60 minutes, or until golden brown and it sounds hollow when tapped.

Let cool completely before slicing for best texture.
