Homemade German Chocolate Cake

Ingredients

Chocolate Cake:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated erythritol (or preferred keto sweetener)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup unsweetened almond milk
  • 2 tsp vanilla extract

German Chocolate Frosting:

  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/3 cup brown erythritol (or keto brown sweetener)
  • 2 egg yolks
  • 1/2 tsp vanilla extract
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat & Prepare:
    Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
  2. Make the Cake Batter:
    • In a bowl, whisk almond flour, coconut flour, cocoa powder, sweetener, baking powder, and salt.
    • In another bowl, beat eggs, melted butter, almond milk, and vanilla extract.
    • Mix dry and wet ingredients until smooth.
  3. Bake:
    • Divide batter between the pans and bake for 20-25 minutes until a toothpick comes out clean.
    • Let cakes cool completely.
  4. Prepare the Frosting:
    • In a saucepan, heat heavy cream, butter, and brown sweetener over medium heat until combined.
    • Whisk in egg yolks and cook for 2-3 minutes until thickened.
    • Remove from heat, stir in vanilla, coconut, and pecans. Let cool.
  5. Assemble & Serve:
    • Place one cake layer on a plate, spread half the frosting.
    • Place the second layer on top and spread the remaining frosting.
