Homemade German Chocolate Cake
Ingredients
Chocolate Cake:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated erythritol (or preferred keto sweetener)
- 2 tsp baking powder
- 1/2 tsp salt
- 4 large eggs
- 1/2 cup unsalted butter (melted)
- 1/2 cup unsweetened almond milk
- 2 tsp vanilla extract
German Chocolate Frosting:
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/3 cup brown erythritol (or keto brown sweetener)
- 2 egg yolks
- 1/2 tsp vanilla extract
- 3/4 cup unsweetened shredded coconut
- 1/2 cup chopped pecans
Instructions
- Preheat & Prepare:
Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans. - Make the Cake Batter:
- In a bowl, whisk almond flour, coconut flour, cocoa powder, sweetener, baking powder, and salt.
- In another bowl, beat eggs, melted butter, almond milk, and vanilla extract.
- Mix dry and wet ingredients until smooth.
- Bake:
- Divide batter between the pans and bake for 20-25 minutes until a toothpick comes out clean.
- Let cakes cool completely.
- Prepare the Frosting:
- In a saucepan, heat heavy cream, butter, and brown sweetener over medium heat until combined.
- Whisk in egg yolks and cook for 2-3 minutes until thickened.
- Remove from heat, stir in vanilla, coconut, and pecans. Let cool.
- Assemble & Serve:
- Place one cake layer on a plate, spread half the frosting.
- Place the second layer on top and spread the remaining frosting.
