Homemade Fried Cheese Bites

Ingredients:
- 8 oz block of cheese (cheddar, mozzarella, or pepper jack)
- 1 egg
- ½ cup almond flour
- ½ cup crushed pork rinds (or coconut flour)
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp Italian seasoning (optional)
- Oil for frying (avocado oil or olive oil)
Instructions:
- Cut the cheese into bite-sized cubes.
- Prepare the coating: In one bowl, whisk the egg. In another, mix almond flour, crushed pork rinds, garlic powder, paprika, and seasoning.
- Coat the cheese: Dip each cube into the egg, then roll it in the flour mixture. For an extra crispy layer, repeat the coating process.
- Freeze for 30 minutes to prevent melting while frying.
- Heat oil in a pan over medium heat and fry cheese bites until golden brown (about 30 seconds per side).
- Drain on paper towels and serve hot with sugar-free marinara or ranch!
