Homemade Fried Cheese Bites

Ingredients:

  • 8 oz block of cheese (cheddar, mozzarella, or pepper jack)
  • 1 egg
  • ½ cup almond flour
  • ½ cup crushed pork rinds (or coconut flour)
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp Italian seasoning (optional)
  • Oil for frying (avocado oil or olive oil)

Instructions:

  1. Cut the cheese into bite-sized cubes.
  2. Prepare the coating: In one bowl, whisk the egg. In another, mix almond flour, crushed pork rinds, garlic powder, paprika, and seasoning.
  3. Coat the cheese: Dip each cube into the egg, then roll it in the flour mixture. For an extra crispy layer, repeat the coating process.
  4. Freeze for 30 minutes to prevent melting while frying.
  5. Heat oil in a pan over medium heat and fry cheese bites until golden brown (about 30 seconds per side).
  6. Drain on paper towels and serve hot with sugar-free marinara or ranch!
