🥞 Homemade Crepes Recipe
Ingredients:
- ½ liter of milk
- ½ teaspoon salt
- 250 grams all-purpose flour
- 3 eggs (commonly used, assuming they were just left out of your list)
- 2 tablespoons melted butter (optional, but improves texture)
- Butter or oil for cooking

- Prepare the Batter:
- In a large mixing bowl, add the flour and salt.
- Crack in the eggs and pour in about half the milk.
- Whisk until smooth and lump-free.
- Gradually add the remaining milk, whisking continuously.
- Stir in the melted butter if using. The batter should be smooth and slightly runny (like heavy cream).
- Rest the Batter (Optional but Recommended):
- Let the batter rest for 30 minutes at room temperature or in the fridge. This helps the gluten relax and gives softer crepes.
- Cook the Crepes:
- Heat a non-stick frying pan or crepe pan over medium heat.
- Lightly grease with butter or oil (wipe off excess with paper towel).
- Pour a small ladle (about 1/4 cup) of batter into the pan. Immediately swirl the pan to coat the surface thinly.
- Cook for about 1-2 minutes, or until the bottom is lightly golden.
- Flip with a spatula and cook the other side for about 30 seconds.
- Repeat:
- Stack cooked crepes on a plate and cover with foil or a towel to keep warm.
- Repeat with remaining batter.
