WW Homemade Buffalo Chicken Taquitos

Ingredients:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1 1/2 cups shredded Monterey Jack or cheddar cheese
  • 8-10 small flour tortillas
  • Cooking spray or vegetable oil
  • Optional toppings: chopped green onions, cilantro, sour cream

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare Buffalo Chicken Filling: In a bowl, combine the shredded chicken, buffalo sauce, and ranch dressing. Mix well until the chicken is coated evenly.
  3. Assemble Taquitos: Place a few tablespoons of the buffalo chicken mixture onto the center of each tortilla. Sprinkle shredded cheese over the chicken.
  4. Roll Taquitos: Roll up each tortilla tightly, ensuring the seam side is facing down. Place the taquitos on the prepared baking sheet.
  5. Bake: Lightly spray the tops of the taquitos with cooking spray or brush with a bit of vegetable oil. Bake in the preheated oven for about 15-20 minutes or until the taquitos are golden and crispy.
  6. Serve: Remove from the oven and let them cool for a few minutes. Optional: sprinkle chopped green onions or cilantro on top. Serve with sour cream or additional ranch dressing for dipping.
