Ingredients:

  • 1 cup shredded mozzarella cheese
  • 2 tablespoons almond flour
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder (optional)
  • Pepperoni slices (or any keto-friendly topping of choice)
  • Sugar-free pizza sauce (for dipping)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Make the Cheese Base:
    In a microwave-safe bowl, combine mozzarella cheese and almond flour. Microwave for 30-40 seconds, then stir until the mixture forms a smooth dough.
  3. Roll Out the Dough:
    Place the dough between two sheets of parchment paper and roll it out into a thin rectangular layer.
  4. Add Seasoning:
    Sprinkle Italian seasoning and garlic powder evenly over the dough for flavor.
  5. Top with Pepperoni:
    Arrange pepperoni slices (or your preferred toppings) over the dough, leaving a small edge for rolling.
  6. Roll It Up:
    Carefully roll the dough into a log shape, using the parchment paper to help keep it tight.
  7. Slice and Bake:
    Slice the roll into bite-sized pieces and place them on the prepared baking sheet. Bake for 8-12 minutes or until golden and crispy.
  8. Serve:
    Let the roll-ups cool slightly, then serve with warm, sugar-free pizza sauce for dipping.
