🥢 Hoisin Beef Noodles

Tender marinated beef, stir-fried with noodles, crisp veg, and a glossy hoisin-soy glaze.

🛒 Ingredients

Marinade:

  • 🥩 500g lean steak strips (e.g., flank, rump, or sirloin)
  • 🥄 1 tbsp light soy sauce
  • 🌑 Freshly ground black pepper, to taste
  • 🧄 (Optional: 1 tsp cornstarch – helps keep beef tender)

Stir-Fry Sauce:

  • 🥢 3 tbsp hoisin sauce
  • 🥄 1 tbsp light soy sauce
  • 🥄 1 tbsp oyster sauce (optional but adds richness)
  • 🌶️ 1 tsp chili garlic sauce or sriracha (optional for heat)
  • 🍶 1 tsp sesame oil
  • 💧 2–3 tbsp water, to thin the sauce if needed

Noodles & Stir-fry:

  • 🍜 250g noodles (egg noodles, udon, or rice noodles)
  • 🧅 2 spring onions, sliced
  • 🫑 1 bell pepper, thinly sliced
  • 🥕 1 carrot, julienned or thinly sliced
  • 🧄 2 garlic cloves, minced
  • 🧑‍🌾 Optional: Broccoli, snap peas, mushrooms, or pak choi
  • 🛢️ 2 tbsp neutral oil (e.g., vegetable or canola)

👨‍🍳 Instructions

1. Marinate the Beef:

  • In a bowl, combine beef strips with 1 tbsp soy sauce and black pepper.
  • Optional: add 1 tsp cornstarch for extra tenderness.
  • Let it sit while you prep everything else (10–15 minutes).

2. Prep the Sauce & Noodles:

  • In a small bowl, mix all the sauce ingredients: hoisin, soy, oyster sauce, chili garlic sauce (if using), sesame oil, and a little water.
  • Cook the noodles according to package directions. Drain, rinse, and toss with a bit of oil to prevent sticking.

3. Stir-Fry the Beef:

  • Heat 1 tbsp oil in a wok or large pan over high heat.
  • Sear the beef in batches for 1–2 minutes per side, until browned and just cooked. Remove and set aside.

4. Cook the Veggies:

  • In the same pan, add another 1 tbsp oil.
  • Stir-fry the garlic, carrot, bell pepper, and any other veggies for 2–3 minutes until crisp-tender.

5. Combine Everything:

  • Return the beef to the pan.
  • Add the noodles and pour in the sauce.
  • Toss everything together on medium-high heat until well coated and heated through (about 2–3 minutes).

6. Finish & Serve:

  • Toss in the spring onions just before serving.
  • Optional toppings: sesame seeds, chili flakes, fresh coriander, or a drizzle of lime juice.
