  • 1 cup diced bell peppers (any color)
  • 1 cup sliced mushrooms
  • 1 small onion, diced

  • 1 lb (450g) lean ground turkey or chicken (optional for extra protein)
  • 1 cup part-skim shredded mozzarella
  • Β½ cup shredded parmesan
  • Β½ cup low-fat ricotta or cottage cheese

  • 1 cup sugar-free marinara sauce
  • 1 tsp Italian seasoning
  • 1 clove garlic, minced
  • Salt & pepper to taste

  • Pepperoni slices (lean or turkey)

1️⃣ Prep the Vegetables

  • Preheat oven to 375Β°F (190Β°C).
  • Lightly sautΓ© zucchini, mushrooms, peppers, and onions 3–4 minutes to remove some moisture. Set aside.

2️⃣ Cook Protein

  • In a skillet, cook ground turkey or chicken until fully cooked. Season with salt, pepper, garlic, and Italian seasoning. Drain any excess liquid.

3️⃣ Assemble Casserole

  1. Spread a thin layer of marinara sauce in a greased 9×13 baking dish.
  2. Add half the zucchini slices.
  3. Top with half the cooked protein, half the sautΓ©ed vegetables, and half the cheeses (mozzarella + ricotta/cottage + parmesan).
  4. Repeat layers: zucchini, protein, vegetables, cheese.
  5. Finish with remaining mozzarella and parmesan on top.
