🌶️ High-Protein Smoky Cheese Jalapeño Chicken Rolls

🥣 Ingredients (4 servings / 4 rolls)

  • 1 lb (450g) chicken breast, pounded thin
  • ½ cup shredded part-skim mozzarella or smoked cheese
  • 2–3 jalapeños, sliced (remove seeds for less heat)
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp olive oil (for baking or searing)
  • Optional: fresh cilantro for garnish

👩‍🍳 Instructions

  1. Preheat oven
    To 190°C (375°F). Line a baking dish with parchment or lightly grease.
  2. Prepare chicken
    Lay chicken breasts flat and season with smoked paprika, garlic powder, salt, and pepper.
  3. Add filling
    Place shredded cheese and jalapeño slices on each chicken breast.
  4. Roll chicken
    Roll the chicken tightly and secure with toothpicks if needed.
  5. Cook
    • Oven method: Brush lightly with olive oil and bake 20–25 minutes until chicken is fully cooked.
    • Stovetop method: Sear rolls in a skillet with a little oil over medium heat, turning to brown all sides, then finish in the oven for 10–15 minutes.
  6. Serve
    Slice rolls if desired and garnish with fresh cilantro. Pair with roasted vegetables or salad.
