Base:
2 high-protein tortillas or low-carb tortillas (~8-inch)
Optional: 2โ4 tbsp refried black beans or mashed cooked black beans
Protein Topping:
250g lean ground beef or ground turkey (~90% lean)
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp smoked paprika
Salt and pepper to taste
Cheese & Toppings:
1/2 cup shredded reduced-fat cheddar or Mexican blend
1/4 cup shredded mozzarella (optional, for extra melt)
1/4 cup diced tomatoes
2โ3 tbsp chopped green onions
2 tbsp Greek yogurt (as a sour cream substitute)
Optional: sliced jalapeรฑos or avocado

- Cook protein
Heat a non-stick skillet over medium heat.
Cook ground beef or turkey with chili powder, cumin, paprika, salt, and pepper until fully cooked (~6โ8 minutes). Drain excess fat if needed. - Prepare base
Place tortillas on a baking sheet.
Spread a thin layer of refried black beans on each tortilla for extra protein and texture (optional). - Assemble Mexican pizza
Sprinkle half of the shredded cheddar and mozzarella on each tortilla.
Evenly distribute cooked ground meat on top.
Add remaining cheese on top of meat for melty goodness. - Bake
Preheat oven to 180ยฐC (350ยฐF).
Bake 8โ10 minutes until cheese is melted and slightly golden. - Top & serve
Remove from oven, top with diced tomatoes, green onions, Greek yogurt, and optional toppings like avocado or jalapeรฑos.
Slice into quarters and serve immediately.
