🧾 Ingredients
- 4 medium zucchini, grated
- 1 tsp salt (for draining zucchini)
- 6 large eggs
- 1½ cups liquid egg whites
- 1 cup low-fat cottage cheese (blended smooth)
- 1½ cups reduced-fat shredded cheese
(cheddar or Colby-jack) - 1 lb lean ground turkey (or chicken), cooked & drained
- ½ cup turkey bacon or lean bacon bits, cooked & chopped
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- 2 tbsp chopped green onions (optional)
🥣 Instructions
1️⃣ Prep the Zucchini
- Preheat oven to 375°F (190°C).
- Grate zucchini, toss with salt, and let sit 10 minutes.
- Squeeze out as much liquid as possible using a towel or cheesecloth.
2️⃣ Mix the Egg Base
- In a large bowl, whisk together:
- eggs
- egg whites
- blended cottage cheese
- black pepper, garlic powder, onion powder, paprika
3️⃣ Combine
- Fold in:
- drained zucchini
- cooked ground turkey
- turkey bacon
- shredded cheese
- green onions
4️⃣ Bake
- Spray a 9×13 baking dish with nonstick spray.
- Spread mixture evenly in dish.
- Bake 35–40 minutes, until:
- center is set
- top is golden
- internal temp reaches 160°F / 71°C
5️⃣ Rest & Serve
- Let rest 10 minutes before slicing.
- Serve as breakfast, lunch, or dinner.
