- 3 large eggs
- 2 egg yolks (extra richness + protein)
- 1/3 cup fresh lemon juice (about 2β3 lemons)
- 1β2 tbsp lemon zest
- 1/4β1/3 cup honey, maple syrup, or low-cal sweetener (adjust to taste)
- 1/2 cup plain Greek yogurt (high protein boost)
- 1 tbsp cornstarch (optional, for thicker texture)
- Pinch of salt
- 1 tsp vanilla extract (optional)

- Whisk base
- In a bowl, whisk eggs + yolks until smooth.
- Add sweetener, lemon juice, zest, salt, and cornstarch (if using).
- Cook gently
- Pour into a saucepan over lowβmedium heat.
- Stir constantly (important!) until it thickens (5β8 minutes).
- It should coat the back of a spoonβdonβt let it boil or eggs may scramble.
- Cool slightly
- Remove from heat and let it cool for 5 minutes.
- Add protein boost
- Whisk in Greek yogurt until fully smooth and creamy.
- Add vanilla if using.
- Chill
- Transfer to a jar/bowl and refrigerate for at least 1β2 hours.
- It thickens more as it cools.
