🥥 High-Protein Crustless Coconut Custard Pie

🥣 Ingredients (8 servings)

  • 1 cup unsweetened shredded coconut
  • 1 cup Greek yogurt (plain, thick)
  • 3 large eggs
  • 1 scoop vanilla protein powder
  • ½ cup unsweetened almond milk or regular milk
  • 2–3 tbsp honey or maple syrup (optional, adjust sweetness)
  • 1 tsp vanilla extract
  • ½ tsp coconut extract (optional, enhances coconut flavor)
  • Pinch of salt

👩‍🍳 Instructions

  1. Preheat oven
    To 175°C (350°F). Grease a 9-inch pie dish lightly.
  2. Mix wet ingredients
    In a large bowl, whisk eggs, Greek yogurt, milk, honey, vanilla, and coconut extract until smooth.
  3. Add dry ingredients
    Fold in shredded coconut, protein powder, and salt until well combined.
  4. Pour and bake
    Pour mixture into the prepared pie dish. Bake 35–40 minutes until set and lightly golden on top.
    Tip: The center should be slightly wobbly—it firms as it cools.
  5. Cool & chill
    Let the pie cool at room temperature, then refrigerate at least 2 hours before serving.
  6. Serve
    Optional toppings: unsweetened whipped cream, toasted coconut, or berries.

  • ~15–20g protein per slice (8 slices)
  • Increase protein by using a second scoop of protein powder or extra Greek yogurt
