Ingredients
High-Protein Blintz Wraps
- ½ cup liquid egg whites
- 2 large eggs
- ¼ cup oat flour (or blended oats)
- ¼ cup low-fat cottage cheese (blended smooth)
- ½ tsp vanilla extract
- Pinch of salt
High-Protein Cream Cheese Filling
- ¾ cup light cream cheese, softened
- ½ cup plain Greek yogurt
- 1–2 Tbsp sweetener (stevia, monk fruit, or honey if preferred)
- ½ tsp vanilla extract
Optional toppings (protein-friendly):
- Fresh berries
- Sugar-free fruit compote
- Greek yogurt drizzle
Instructions
1. Make the blintz wraps
- Blend all wrap ingredients until smooth.
- Heat a non-stick skillet over medium-low heat and lightly grease.
- Pour a thin layer of batter, swirling to coat the pan.
- Cook 1–2 minutes until set, flip carefully, cook 30 seconds.
- Remove and repeat (makes about 6 thin wraps).
2. Make the filling
- Mix cream cheese, Greek yogurt, sweetener, and vanilla until smooth and creamy.
3. Assemble
- Spoon filling onto center of each wrap.
- Fold sides in, then roll like a burrito.
4. Optional pan finish (traditional style)
- Lightly grease skillet and cook blintzes seam-side down for 1–2 minutes per side until lightly golden.
