- Pinch of salt
- Optional: cinnamon, blueberries, or chocolate chips

- Blend cottage cheese, eggs, oats, vanilla, sweetener, and salt in a blender until smooth.
- Let batter sit 5 minutes to thicken slightly.

- Heat non-stick skillet over medium heat.
- Lightly grease with cooking spray or a small amount of oil.
- Pour ~ΒΌ cup batter per pancake.
