🛒 Ingredients (Makes 8 Muffins)
Dry Ingredients
- 1 cup oat flour (or blended oats)
- 1 scoop (25–30g) vanilla whey protein powder
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- Pinch salt
Wet Ingredients
- 2 large eggs
- ½ cup unsweetened almond milk (or milk of choice)
- ¼ cup unsweetened applesauce
- 2 tbsp maple syrup or monk fruit sweetener
- 1 tsp vanilla extract
Cinnamon Swirl
- 2 tbsp coconut sugar or brown sugar substitute
- 1 tsp cinnamon
- 1 tsp melted coconut oil
Optional Glaze
- 2 tbsp Greek yogurt + 1 tsp vanilla + splash almond milk
🔥 Instructions
1️⃣ Prep
- Preheat oven to 350°F (175°C).
- Line a 8-cup muffin tin with liners or lightly grease.
2️⃣ Make Batter
- In a bowl, whisk together dry ingredients.
- In a separate bowl, mix wet ingredients.
- Combine wet and dry until smooth.
3️⃣ Prepare Cinnamon Swirl
- Mix coconut sugar, cinnamon, and melted coconut oil.
- Pour half of muffin batter into tin.
- Sprinkle cinnamon mixture over batter.
- Pour remaining batter on top and swirl gently with a knife.
4️⃣ Bake
- Bake 18–22 minutes, or until a toothpick comes out clean.
- Let cool 5 minutes before removing from pan.
5️⃣ Optional Glaze
- Mix Greek yogurt, vanilla, and splash of almond milk.
- Drizzle over cooled muffins.
