🧁 High-Protein Cinnamon Roll Protein Muffins

🛒 Ingredients (Makes 8 Muffins)

Dry Ingredients

  • 1 cup oat flour (or blended oats)
  • 1 scoop (25–30g) vanilla whey protein powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • Pinch salt

Wet Ingredients

  • 2 large eggs
  • ½ cup unsweetened almond milk (or milk of choice)
  • ¼ cup unsweetened applesauce
  • 2 tbsp maple syrup or monk fruit sweetener
  • 1 tsp vanilla extract

Cinnamon Swirl

  • 2 tbsp coconut sugar or brown sugar substitute
  • 1 tsp cinnamon
  • 1 tsp melted coconut oil

Optional Glaze

  • 2 tbsp Greek yogurt + 1 tsp vanilla + splash almond milk

🔥 Instructions

1️⃣ Prep

  • Preheat oven to 350°F (175°C).
  • Line a 8-cup muffin tin with liners or lightly grease.

2️⃣ Make Batter

  1. In a bowl, whisk together dry ingredients.
  2. In a separate bowl, mix wet ingredients.
  3. Combine wet and dry until smooth.

3️⃣ Prepare Cinnamon Swirl

  • Mix coconut sugar, cinnamon, and melted coconut oil.
  • Pour half of muffin batter into tin.
  • Sprinkle cinnamon mixture over batter.
  • Pour remaining batter on top and swirl gently with a knife.

4️⃣ Bake

  • Bake 18–22 minutes, or until a toothpick comes out clean.
  • Let cool 5 minutes before removing from pan.

5️⃣ Optional Glaze

  • Mix Greek yogurt, vanilla, and splash of almond milk.
  • Drizzle over cooled muffins.
