High-Protein Chicken Veggie Skillet

Ingredients (4 servings)

  • Chicken breast – 1½ lb (680 g), diced
  • Olive oil – 1 Tbsp
  • Bell peppers – 2, sliced
  • Zucchini – 1 large, sliced
  • Broccoli florets – 2 cups
  • Onion – 1 small, sliced
  • Garlic – 3 cloves, minced
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Paprika – 1 tsp
  • Italian seasoning – 1 tsp

Optional protein/cream boost:

  • ½ cup Greek yogurt or cottage cheese

Instructions

  1. Cook chicken
    Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt, pepper, and paprika. Cook 6–8 minutes until golden and cooked through. Remove and set aside.
  2. Cook vegetables
    In the same skillet, add onion and cook 2 minutes. Add garlic, peppers, zucchini, and broccoli. Cook 5–7 minutes until tender-crisp.
  3. Combine
    Return chicken to skillet. Sprinkle Italian seasoning and stir well.
  4. Optional creamy finish
    Lower heat and stir in Greek yogurt or cottage cheese until warm and creamy (do not boil).
  5. Serve hot
