🧀 Ingredients

For the Chaffle Base:

  • 2 large eggs
  • ½ cup (56g) shredded mozzarella cheese
  • ¼ cup (28g) shredded cheddar or parmesan cheese
  • 1 scoop (25–30g) unflavored or savory protein powder (whey, casein, or egg white)
  • 1 tbsp almond flour (optional, for crispiness)
  • ¼ tsp baking powder
  • Pinch of garlic powder, Italian seasoning, and salt

For the Pizza Toppings:

  • ¼ cup (60g) pizza sauce or sugar-free marinara
  • ½ cup (56g) shredded mozzarella cheese
  • 8–12 turkey pepperoni slices (or your choice of protein: chicken, ham, tofu, etc.)
  • Optional toppings: sliced olives, diced bell peppers, onions, mushrooms, spinach, etc.
  • Optional garnish: crushed red pepper, dried oregano, or basil

  • Mixing bowl
  • Spoon or spatula
  • Baking sheet or air fryer (for melting toppings)

👩‍🍳 Instructions

1. Make the chaffle batter:

  • Preheat your mini waffle maker.
  • In a small bowl, whisk together eggs, protein powder, baking powder, and seasonings until smooth.
  • Stir in the mozzarella (and cheddar or parmesan, if using) until well combined.
  • Optional: Add almond flour for a firmer, crispier texture.

2. Cook the chaffles:

  • Lightly spray the waffle maker with nonstick spray.
  • Spoon ¼ of the batter into the waffle maker and spread it evenly.
  • Close the lid and cook for 3–4 minutes, until golden brown and slightly crispy.
  • Repeat with the remaining batter to make 4 mini chaffles.

3. Turn chaffles into mini pizzas:

  • Place cooked chaffles on a parchment-lined baking sheet.
  • Spread 1 tbsp of pizza sauce on each chaffle.
  • Top with mozzarella cheese and your favorite toppings (pepperoni, veggies, etc.).

4. Melt the cheese:

  • Option 1 (Oven): Broil on high for 2–3 minutes, until cheese is melted and bubbly.
  • Option 2 (Air fryer): Air fry at 375°F (190°C) for 3–4 minutes, until golden and melty.

5. Serve & enjoy:

  • Sprinkle with oregano or crushed red pepper if desired.
  • Let cool slightly — the chaffles will crisp up as they cool.
