- 1 cup low-fat cottage cheese
- 1 large egg
- 1β2 tbsp maple syrup or honey (or sweetener of choice)
- Β½ tsp vanilla extract
- 1 tbsp oat flour (or blended oats)
- ΒΌ tsp baking powder
- Pinch of salt
- β cup fresh strawberries (chopped)
Optional add-ins:
- 1 tbsp vanilla protein powder (for extra protein boost)
- 1 tbsp mini chocolate chips
- Β½ tsp lemon zest

- Preheat oven to 350Β°F (175Β°C).
- In a blender or food processor, blend cottage cheese, egg, sweetener, vanilla, oat flour, baking powder, and salt until smooth.
- Stir in chopped strawberries.
- Pour into a greased ramekin or small baking dish.
- Bake for 25β30 minutes until set in the center.
- Let cool 5β10 minutes (it firms up as it rests).
