🛒 Ingredients

1 medium cauliflower, broken into florets

1 tsp salt

2 tbsp olive oil

1 cup low-fat or full-fat Greek yogurt (adds protein and creaminess)

1–1½ cups grated cheese (cheddar, mozzarella, or a mix; part-skim for higher protein)

1 tsp mustard (optional, flavor enhancer)

½ tsp black pepper

½ tsp paprika (optional, for color)

2 tbsp grated Parmesan (for topping, optional)

Optional: fresh herbs like parsley or chives

👩‍🍳 Instructions

  1. Preheat Oven

Preheat oven to 200°C / 400°F.

Grease a baking dish lightly with 1 tsp olive oil or cooking spray.

  1. Prepare Cauliflower

Toss cauliflower florets with 2 tbsp olive oil and 1 tsp salt.

Spread evenly in the baking dish.

Roast 10–12 minutes to slightly soften.

  1. Make Cheese Sauce

In a bowl, combine Greek yogurt, grated cheese (reserve a little for topping), mustard, black pepper, and paprika.

Mix until smooth and creamy.

  1. Combine & Bake

Pour cheese sauce over the roasted cauliflower.

Sprinkle reserved cheese and Parmesan on top.

Bake uncovered 15–20 minutes until bubbly and golden.

  1. Serve

Let cool 5 minutes before serving.

Garnish with fresh herbs if desired.
