🌿🧀 Diabetic Herb & Cheese Scones
🛒 Ingredients (Makes 8 scones)
- 1 ¾ cups almond flour
- ¼ cup coconut flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp dried mixed herbs (or fresh finely chopped herbs like rosemary, thyme, chives)
- ½ cup shredded sharp cheddar cheese
- 2 large eggs
- ¼ cup unsweetened plain Greek yogurt or sour cream
- 2 tbsp melted butter or olive oil
- Optional: 1 tsp garlic powder or onion powder for extra flavor

👩🍳 Instructions
- Preheat Oven:
Preheat to 375°F (190°C). Line a baking sheet with parchment paper. - Mix Dry Ingredients:
In a bowl, combine almond flour, coconut flour, baking powder, salt, herbs, and cheese. - Add Wet Ingredients:
In another bowl, whisk eggs, yogurt (or sour cream), and melted butter. - Combine:
Add wet mixture to dry ingredients and stir until dough comes together. It will be slightly sticky but manageable. - Shape Scones:
Transfer dough onto a parchment-lined surface. Pat into a circle about 1 inch thick. Cut into 8 wedges. - Bake:
Place wedges on baking sheet and bake for 15–18 minutes until golden and cooked through. - Cool & Serve:
Let cool slightly before serving. Enjoy with butter or low-carb jam!
