Healthy taco pie

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) corn, drained
  • 6 whole wheat tortillas (6-inch)
  • 1 cup reduced-fat shredded cheddar cheese
  • Optional toppings: sliced olives, chopped green onions, salsa, fat-free Greek yogurt, cilantro

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Meat:
    • In a large skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
  3. Add Vegetables and Seasoning:
    • Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.
    • Stir in the taco seasoning, diced tomatoes, black beans, and corn. Let it simmer for another 5 minutes.
  4. Assemble the Pie:
    • Spray a 9-inch pie dish with cooking spray. Layer 3 tortillas at the bottom of the dish, overlapping slightly. Spread half of the meat mixture over the tortillas, then sprinkle with 1/2 cup of the cheese.
    • Repeat with the remaining tortillas, meat mixture, and cheese.
  5. Bake the Pie:
    • Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let it cool for a few minutes before slicing. Top with your favorite optional toppings like olives, green onions, salsa, Greek yogurt, or cilantro.
