Healthy Oat Cookies With Dried Fruit & Nuts Recipe 🍪🌰🍇

Ingredients:

– 200g peanuts (7 oz)

– 60g hazelnuts (2 oz)

– 30g pumpkin seeds (1 oz)

– 1 tablespoon sunflower seeds

– 1 tablespoon sesame seeds

– 30g dried cranberries (1 oz)

Directions:

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a food processor, pulse the peanuts and hazelnuts until finely chopped. Transfer to a mixing bowl.

3. Add the pumpkin seeds, sunflower seeds, sesame seeds, and dried cranberries to the bowl with the chopped nuts.

4. Mix all the ingredients together until well combined.

5. Using your hands, form the mixture into small cookie shapes and place them on the prepared baking sheet.

6. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.

7. Remove from the oven and let them cool completely before enjoying.

Tips:

– Feel free to swap out the dried cranberries for raisins or chopped apricots for a different flavor.

– Store the cookies in an airtight container to keep them fresh for longer.
