Healthy Lemon Raspberry Protein Muffins (High Protein)

🛒 Ingredients

Wet Ingredients

  • ¾ cup plain Greek yogurt (high-protein, thick)
  • 2 large eggs
  • ¼ cup honey or maple syrup (or sugar-free sweetener)
  • ¼ cup lemon juice (fresh)
  • 2 tbsp lemon zest
  • 2 tbsp olive oil or melted coconut oil
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 cup oat flour (blend rolled oats)
  • ½ cup vanilla or unflavored protein powder (whey or plant)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt

Fold-Ins

  • 1 cup fresh or frozen raspberries
  • 1 tbsp oat flour (to coat berries)

👩‍🍳 Instructions

  1. Preheat Oven
    • Preheat to 175°C / 350°F.
    • Line a muffin tin or lightly grease.
  2. Mix Wet Ingredients
    • In a large bowl, whisk yogurt, eggs, sweetener, lemon juice, zest, oil, and vanilla.
  3. Mix Dry Ingredients
    • In a separate bowl, combine oat flour, protein powder, baking powder, baking soda, and salt.
  4. Combine
    • Add dry ingredients to wet ingredients.
    • Stir gently until just combined.
  5. Add Raspberries
    • Toss raspberries with 1 tbsp oat flour.
    • Fold gently into batter.
  6. Bake
    • Divide batter evenly (about ¾ full).
    • Bake 18–22 minutes until a toothpick comes out mostly clean.
  7. Cool
    • Let cool 5 minutes in pan, then transfer to rack.
