Healthy Beef Nachos Supreme: Indulge Without the Guilt
Ingredients:
For the Nachos:
- 1 pound lean ground beef (90% lean)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup low-sodium beef broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 bag (8 oz) baked tortilla chips
- 1 cup shredded reduced-fat cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup sliced black olives (optional)
- 1 jalapeño, sliced (optional)
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
For the Healthy Sour Cream:
- 1/2 cup plain Greek yogurt
- 1 tablespoon lime juice
- Salt to taste
Instructions:
- Prepare the Beef Mixture:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for an additional 1 minute.
- Add the ground beef and cook until browned, breaking it up with a spoon.
- Stir in cumin, chili powder, smoked paprika, salt, and black pepper.
- Pour in the beef broth and bring to a simmer. Let it cook until the liquid is mostly evaporated.
- Stir in the black beans and cook until heated through. Remove from heat.
- Assemble the Nachos:
- Preheat your oven to 375°F (190°C).
- Arrange the baked tortilla chips on a large baking sheet or oven-safe platter.
- Spoon the beef and bean mixture evenly over the chips.
- Sprinkle shredded cheddar cheese on top.
- Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes.
- Prepare the Toppings:
- In a small bowl, mix the Greek yogurt with lime juice and a pinch of salt to create a healthy sour cream alternative.
- Dice the tomatoes, red onion, avocado, and slice the jalapeño and olives if using.
- Serve:
- Remove the nachos from the oven and top with diced tomatoes, red onion, black olives, jalapeño slices, avocado, and chopped cilantro.
- Drizzle with the prepared healthy sour cream.
- Serve immediately and enjoy!
Tips:
- For added nutrition, you can mix in some finely chopped spinach or kale with the beef mixture.
- If you prefer a vegetarian option, substitute the beef with a meatless ground beef alternative or additional beans.
- You can also add more veggies like bell peppers or corn to the toppings.
