Healthy Beef Nachos Supreme: Indulge Without the Guilt

Ingredients:

For the Nachos:

  • 1 pound lean ground beef (90% lean)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup low-sodium beef broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 bag (8 oz) baked tortilla chips
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup sliced black olives (optional)
  • 1 jalapeño, sliced (optional)
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro

For the Healthy Sour Cream:

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • Salt to taste

Instructions:

  1. Prepare the Beef Mixture:
    • Heat olive oil in a large skillet over medium heat.
    • Add chopped onion and cook until softened, about 3-4 minutes.
    • Add minced garlic and cook for an additional 1 minute.
    • Add the ground beef and cook until browned, breaking it up with a spoon.
    • Stir in cumin, chili powder, smoked paprika, salt, and black pepper.
    • Pour in the beef broth and bring to a simmer. Let it cook until the liquid is mostly evaporated.
    • Stir in the black beans and cook until heated through. Remove from heat.
  2. Assemble the Nachos:
    • Preheat your oven to 375°F (190°C).
    • Arrange the baked tortilla chips on a large baking sheet or oven-safe platter.
    • Spoon the beef and bean mixture evenly over the chips.
    • Sprinkle shredded cheddar cheese on top.
    • Bake in the preheated oven until the cheese is melted and bubbly, about 10 minutes.
  3. Prepare the Toppings:
    • In a small bowl, mix the Greek yogurt with lime juice and a pinch of salt to create a healthy sour cream alternative.
    • Dice the tomatoes, red onion, avocado, and slice the jalapeño and olives if using.
  4. Serve:
    • Remove the nachos from the oven and top with diced tomatoes, red onion, black olives, jalapeño slices, avocado, and chopped cilantro.
    • Drizzle with the prepared healthy sour cream.
    • Serve immediately and enjoy!

Tips:

  • For added nutrition, you can mix in some finely chopped spinach or kale with the beef mixture.
  • If you prefer a vegetarian option, substitute the beef with a meatless ground beef alternative or additional beans.
  • You can also add more veggies like bell peppers or corn to the toppings.
