Healthy Banana Oatmeal Muffins

Ingredients:

  • 2 large ripe bananas (mashed)
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened Greek yogurt (or regular yogurt)
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup oat flour (or more oats blended into flour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup chopped walnuts, dark chocolate chips, or blueberries

🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. Mix wet ingredients:
    In a large bowl, mash bananas. Whisk in eggs, honey/maple syrup, Greek yogurt, and vanilla until smooth.
  3. Add dry ingredients:
    Stir in oats, oat flour, baking powder, baking soda, cinnamon, and salt. Fold until just combined. Add optional mix-ins if using.
  4. Fill muffin tin:
    Divide batter evenly among 12 muffin cups (about 3/4 full).
  5. Bake:
    Bake for 18–20 minutes or until a toothpick comes out clean.
  6. Cool:
    Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
