Healthy Banana Oatmeal Muffins

Ingredients:
- 2 large ripe bananas (mashed)
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/2 cup unsweetened Greek yogurt (or regular yogurt)
- 1 tsp vanilla extract
- 1 1/2 cups rolled oats
- 1/2 cup oat flour (or more oats blended into flour)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- Optional: 1/4 cup chopped walnuts, dark chocolate chips, or blueberries
🥣 Instructions:
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- Mix wet ingredients:
In a large bowl, mash bananas. Whisk in eggs, honey/maple syrup, Greek yogurt, and vanilla until smooth. - Add dry ingredients:
Stir in oats, oat flour, baking powder, baking soda, cinnamon, and salt. Fold until just combined. Add optional mix-ins if using. - Fill muffin tin:
Divide batter evenly among 12 muffin cups (about 3/4 full). - Bake:
Bake for 18–20 minutes or until a toothpick comes out clean. - Cool:
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
