Hawaiian BBQ Marinated Boneless Chicken Thighs

Ingredients

For the marinade:

  • 1/2 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

For the chicken:

  • 1.5 to 2 pounds boneless, skinless chicken thighs
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions

  1. Prepare the marinade:
    • In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, vegetable oil, minced ginger, minced garlic, sesame oil, and red pepper flakes (if using).
  2. Marinate the chicken:
    • Place the boneless chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated.
    • Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, or up to overnight for the best flavor.
  3. Cook the chicken:
    • Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan or a regular skillet on the stove.
    • Remove the chicken from the marinade, allowing any excess to drip off. Discard the marinade.
    • Grill the chicken thighs for about 5-7 minutes per side, or until they reach an internal temperature of 165°F (74°C) and have a nice char.
    • If using a grill pan or skillet, cook the chicken over medium-high heat, flipping once until cooked through and nicely browned.
  4. Serve:
    • Transfer the cooked chicken to a serving platter. Garnish with chopped green onions and sesame seeds if desired.
    • Serve the Hawaiian BBQ marinated chicken thighs with steamed rice, grilled pineapple, and a side of your favorite vegetables.
