Ground Beef Skillet

Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth (or water with bouillon)
- 1 cup uncooked pasta (elbow macaroni or small shells work well)
- 1 tsp chili powder (optional)
- 1 tsp paprika
- Salt & pepper to taste
- 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a mix)
- Optional: chopped parsley or green onions for garnish

Instructions:
- Brown the Beef:
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Sauté Veggies:
- Add diced onion, garlic, and bell pepper to the skillet. Cook for 3–5 minutes until softened.
- Add Liquids & Seasoning:
- Stir in diced tomatoes (with juice), beef broth, uncooked pasta, chili powder, paprika, salt, and pepper.
- Simmer:
- Bring the mixture to a boil. Reduce heat, cover, and simmer for 12–15 minutes, or until pasta is cooked through. Stir occasionally.
- Add Cheese:
- Once pasta is tender and most of the liquid is absorbed, sprinkle cheese over the top. Cover and let melt for 2–3 minutes.
- Garnish & Serve:
- Top with chopped parsley or green onions if desired. Serve hot!
