Grilled Chicken Bites with Creamy Garlic Sauce
🍗 Ingredients (Chicken Bites):
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized chunks
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp lemon juice (optional, for extra brightness)
- Skewers (if using)
🧄 Ingredients (Creamy Garlic Sauce):
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for lighter version)
- 1/4 cup grated Parmesan cheese
- Salt & pepper, to taste
- 1 tbsp chopped parsley (optional for garnish)
🔥 Instructions:
1. Marinate the Chicken:
- In a bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
- Let marinate for 15–30 minutes (or up to overnight in the fridge).
2. Grill the Chicken:
- Preheat grill or grill pan over medium-high heat.
- Thread chicken bites onto skewers (or cook directly on the grill pan).
- Grill for 3–4 minutes per side, until nicely charred and fully cooked (internal temp: 165°F/74°C).
- Remove from heat and let rest.
3. Make the Creamy Garlic Sauce:
- In a small saucepan, melt butter over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant (don’t brown it).
- Stir in cream and bring to a gentle simmer.
- Add Parmesan, whisking until smooth and thickened (about 3–5 minutes).
- Season with salt and pepper to taste.
- Optional: stir in a pinch of crushed red pepper or a squeeze of lemon juice for extra flavor.
4. Serve:
- Drizzle sauce over chicken bites or serve as a dip.
- Garnish with fresh parsley or extra Parmesan if you like.

- Air Fryer Option: Cook chicken bites at 400°F (200°C) for 10–12 minutes, shaking halfway.
- Want extra heat? Add a dash of cayenne or chili flakes to the chicken or sauce.
- Sauce too thick? Thin it out with a splash of milk or broth.
