🥗 Grilled Chicken Avocado Salad
Ingredients (2 servings)
For the Salad:
- 2 grilled chicken breasts (sliced)
- 1 ripe avocado (sliced)
- 4 cups mixed greens (e.g., spinach, arugula, romaine)
- 1 cup cherry tomatoes (halved)
- ½ cucumber (sliced)
- ¼ red onion (thinly sliced)
- 2 tablespoons crumbled feta or goat cheese (optional)
- 1 tablespoon sunflower seeds or chopped almonds (optional for crunch)
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice or balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt & pepper to taste
- ½ teaspoon garlic powder or 1 small garlic clove (minced)
Instructions
- Grill the Chicken:
Season chicken breasts with salt, pepper, garlic powder, and a bit of olive oil. Grill or pan-sear over medium heat for 5–6 minutes per side until cooked through. Let rest, then slice. - Assemble the Salad:
In a large bowl or two plates, layer mixed greens, tomatoes, cucumber, red onion, avocado slices, cheese (if using), and seeds/nuts. - Make the Dressing:
Whisk together olive oil, lemon juice (or vinegar), Dijon mustard, garlic, salt, and pepper until emulsified. - Combine:
Top the salad with sliced grilled chicken and drizzle with the dressing. Toss gently to coat or serve with dressing on the side.
