For the bowl:
- 2 grilled chicken breasts, sliced
- 2 cups cooked brown rice
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels (fresh, canned, or frozen)
- 1/4 cup red onion, thinly sliced (optional)
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
For the dressing (optional but recommended):
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey or maple syrup
- 1/2 tsp cumin
- Salt & pepper, to taste
π₯ Grilled Chicken (Quick Seasoning):
If you need to make the chicken from scratch, season it with:
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper, to taste
Grill or pan-sear for about 6β8 minutes per side, or until fully cooked.

- Cook the rice:
- If not using pre-cooked rice, cook brown rice according to package instructions and set aside.
- Prepare the chicken:
- Grill or pan-cook the seasoned chicken breasts until golden and cooked through.
- Let rest 5 minutes, then slice thinly.
- Make the dressing:
- In a small bowl, whisk together olive oil, lime juice, honey, cumin, salt, and pepper.
- Assemble the bowls:
- Divide brown rice into bowls.
- Top each bowl with sliced grilled chicken, avocado, tomatoes, corn, red onion, and cilantro.
- Drizzle & serve:
- Spoon the dressing over the bowls.
- Serve with lime wedges and extra cilantro if desired.
