Greek Chicken Meatballs (Diabetic-Friendly)
🧾 Ingredients (Serves 4)
For the meatballs:
- 1 lb ground chicken (lean)
- ¼ cup almond flour (instead of breadcrumbs)
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- ½ tsp ground cumin (optional)
- ¼ cup finely chopped spinach
- Salt & black pepper to taste
Optional Tzatziki Sauce:
- ½ cup plain Greek yogurt
- ¼ cup grated cucumber (squeezed dry)
- 1 tsp lemon juice
- 1 tsp olive oil
- 1 clove garlic, minced
- Fresh dill (optional)
- Pinch salt

- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix all meatball ingredients until combined (don’t overmix).
- Form into 16–18 small meatballs and place on baking sheet.
- Bake 18–22 minutes, until cooked through (internal temp 165°F / 74°C).
- Mix tzatziki ingredients in a small bowl and chill until ready to serve.
