Garlic Roasted Whole Cauliflower

Ingredients:
- 1 large head of cauliflower, leaves removed
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme (or fresh if available)
- 1 lemon, zested and juiced
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
- Prepare the Cauliflower: Rinse the cauliflower head thoroughly and pat it dry with a towel. Trim the base slightly so it can sit flat on the baking sheet.
- Make the Marinade: In a small bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, dried thyme, lemon zest, and half of the lemon juice. Mix well to form a paste.
