Fruity Tapioca Jelly Drink

Ingredients:
For Keto “Tapioca” Pearls (Chia version):
- 2 tbsp chia seeds
- 1/2 cup unsweetened almond milk (or coconut milk)
- 2-3 drops of fruit flavor extract (like mango, lychee, or strawberry)
- Sweetener to taste (erythritol/stevia)
For the Jelly Cubes:
- 1 cup water
- 1 tbsp unflavored gelatin (or agar agar for vegan version)
- 2-3 tbsp sugar-free fruit syrup or flavored drink (like Mio or Crystal Light)
- Sweetener to taste
For the Drink Base:
- 1/2 cup unsweetened coconut water or flavored sparkling water
- 1/4 cup heavy cream or almond milk
- Ice cubes
- Extra sweetener if needed
Instructions:
- Make Keto Jelly Cubes:
- Heat 1 cup of water till warm (not boiling).
- Mix in gelatin, stir until dissolved.
- Add your sugar-free fruit flavor/syrup + sweetener.
- Pour into a flat tray, chill in the fridge for 1 hour or until set. Cut into small cubes.
- Prepare “Tapioca” Chia Pearls:
- Mix chia seeds with almond milk, flavor extract, and sweetener.
- Let it sit for 15–30 minutes to form a jelly-like texture.
- Assemble the Drink:
- In a tall glass, add jelly cubes + chia “pearls.”
- Pour over your drink base (coconut water or sparkling water + cream).
- Add ice cubes and stir gently.
- Optional: Top with whipped cream or a keto fruit slice (like strawberry or a few blueberries).
