Fruity Tapioca Jelly Drink

Ingredients:

For Keto “Tapioca” Pearls (Chia version):

  • 2 tbsp chia seeds
  • 1/2 cup unsweetened almond milk (or coconut milk)
  • 2-3 drops of fruit flavor extract (like mango, lychee, or strawberry)
  • Sweetener to taste (erythritol/stevia)

For the Jelly Cubes:

  • 1 cup water
  • 1 tbsp unflavored gelatin (or agar agar for vegan version)
  • 2-3 tbsp sugar-free fruit syrup or flavored drink (like Mio or Crystal Light)
  • Sweetener to taste

For the Drink Base:

  • 1/2 cup unsweetened coconut water or flavored sparkling water
  • 1/4 cup heavy cream or almond milk
  • Ice cubes
  • Extra sweetener if needed

Instructions:

  1. Make Keto Jelly Cubes:
    • Heat 1 cup of water till warm (not boiling).
    • Mix in gelatin, stir until dissolved.
    • Add your sugar-free fruit flavor/syrup + sweetener.
    • Pour into a flat tray, chill in the fridge for 1 hour or until set. Cut into small cubes.
  2. Prepare “Tapioca” Chia Pearls:
    • Mix chia seeds with almond milk, flavor extract, and sweetener.
    • Let it sit for 15–30 minutes to form a jelly-like texture.
  3. Assemble the Drink:
    • In a tall glass, add jelly cubes + chia “pearls.”
    • Pour over your drink base (coconut water or sparkling water + cream).
    • Add ice cubes and stir gently.
  4. Optional: Top with whipped cream or a keto fruit slice (like strawberry or a few blueberries).
