Frozen Healthy Snickers

Ingredients:

For the Nougat Layer:

  • 1 cup raw almonds
  • 1 cup pitted dates
  • 1 tablespoon almond butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Caramel Layer:

  • 1 cup pitted dates
  • 2 tablespoons almond butter
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Peanut Layer:

  • 1 cup roasted unsalted peanuts

For the Chocolate Coating:

  • 1 cup dark chocolate, melted
  • 1 tablespoon coconut oil

Instructions:

For the Nougat Layer:

  1. Prepare Almonds: In a food processor, blend the raw almonds until they form a fine meal.
  2. Add Ingredients: Add the pitted dates, almond butter, vanilla extract, and a pinch of salt to the almond meal. Blend until the mixture forms a sticky dough.
  3. Press Into Pan: Press the nougat mixture into the bottom of a lined square baking dish to create the first layer.

For the Caramel Layer:

  1. Prepare Dates: Blend the pitted dates until they form a paste.
  2. Add Ingredients: Add almond butter, melted coconut oil, vanilla extract, and a pinch of salt to the date paste. Blend until smooth.
  3. Spread Over Nougat: Spread the caramel mixture evenly over the nougat layer.

For the Peanut Layer:

  1. Add Peanuts: Sprinkle the roasted unsalted peanuts evenly over the caramel layer.

For the Chocolate Coating:

  1. Melt Chocolate: In a heatproof bowl, melt the dark chocolate with coconut oil using a double boiler or in short bursts in the microwave, stirring until smooth.
  2. Pour Over Peanuts: Pour the melted chocolate over the peanuts, ensuring they are well coated.
  3. Freeze: Place the baking dish in the freezer for at least 4 hours or until completely frozen.
  4. Cut Into Bars: Once frozen, remove the mixture from the freezer and cut it into bars.
  5. Serve: Serve the Frozen Healthy Snickers bars straight from the freezer and enjoy!

Notes:

  • Storage: Store the bars in an airtight container in the freezer.
  • Sweeteners: The natural sweetness from dates is used in this recipe. Adjust sweetness to your liking.
  • Nut Variations: Feel free to experiment with different nuts for added variety.
