Frozen fruit salad
Ingredients:
- 1 can (14 ounces) sweetened condensed milk
- 1 package (8 ounces) cream cheese, softened
- 1 can (20 ounces) crushed pineapple, drained
- 1 can (11 ounces) mandarin oranges, drained
- 1 cup fresh strawberries, chopped
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup fresh or frozen sliced peaches
- 1 cup mini marshmallows (optional)
- 1 cup sweetened shredded coconut (optional)
- 1 cup chopped pecans or walnuts (optional)
Instructions:
- Prepare the Creamy Base:
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add the sweetened condensed milk, continuing to beat until well combined.
- Mix in the Fruits:
- Gently fold in the drained crushed pineapple, mandarin oranges, chopped strawberries, blueberries, raspberries, and sliced peaches.
- Optional Add-ins:
- If desired, gently fold in the mini marshmallows, shredded coconut, and chopped nuts.
- Freeze the Salad:
- Transfer the fruit mixture into a large freezer-safe container or individual serving cups.
- Cover and freeze for at least 4 hours or until firm.
- Serve:
- Before serving, let the frozen fruit salad sit at room temperature for about 10 minutes to soften slightly.
- Scoop and serve as a refreshing dessert or side dish.
Tips:
- You can use any combination of fruits you like or have on hand.
- If using fresh peaches, peel and slice them before adding to the salad.
- This recipe can be made a day ahead and kept frozen until ready to serve.
