Frozen fruit salad

Ingredients:

  • 1 can (14 ounces) sweetened condensed milk
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 can (11 ounces) mandarin oranges, drained
  • 1 cup fresh strawberries, chopped
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh or frozen sliced peaches
  • 1 cup mini marshmallows (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 cup chopped pecans or walnuts (optional)

Instructions:

  1. Prepare the Creamy Base:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
    • Gradually add the sweetened condensed milk, continuing to beat until well combined.
  2. Mix in the Fruits:
    • Gently fold in the drained crushed pineapple, mandarin oranges, chopped strawberries, blueberries, raspberries, and sliced peaches.
  3. Optional Add-ins:
    • If desired, gently fold in the mini marshmallows, shredded coconut, and chopped nuts.
  4. Freeze the Salad:
    • Transfer the fruit mixture into a large freezer-safe container or individual serving cups.
    • Cover and freeze for at least 4 hours or until firm.
  5. Serve:
    • Before serving, let the frozen fruit salad sit at room temperature for about 10 minutes to soften slightly.
    • Scoop and serve as a refreshing dessert or side dish.

Tips:

  • You can use any combination of fruits you like or have on hand.
  • If using fresh peaches, peel and slice them before adding to the salad.
  • This recipe can be made a day ahead and kept frozen until ready to serve.
