Diabetic-Friendly Fried Chicken Livers
Ingredients (4 servings)
- 1 lb chicken livers, cleaned and trimmed
- 2 large eggs
- ½ cup almond flour (or crushed pork rinds for extra crunch)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- 2–3 tbsp olive oil or avocado oil (for frying)
- Optional: fresh parsley for garnish
Instructions
- Rinse chicken livers and pat dry with paper towels.
- In a bowl, whisk eggs.
- In another bowl, mix almond flour, paprika, garlic powder, onion powder, salt, and pepper.
- Dip each liver first in egg, then coat in almond flour mixture.
- Heat oil in a skillet over medium heat.
- Fry livers 3–4 minutes per side until golden and cooked through (internal temp ~165°F/74°C).
- Drain on paper towels and serve warm. Garnish with parsley if desired.
