🥗 Fresh Caesar Salad With Tender Grilled Chicken
🍗 Ingredients:
For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Juice of ½ lemon (optional, for added flavor)
For the Caesar Dressing (homemade):
- 1 egg yolk (or 1 tbsp mayonnaise if avoiding raw egg)
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 2 anchovy fillets, minced (optional, but authentic)
- 2 tbsp fresh lemon juice
- ½ cup olive oil
- ¼ cup grated Parmesan cheese
- Salt and black pepper to taste
For the Salad:
- 1 large head romaine lettuce, washed and chopped
- ½ cup croutons (store-bought or homemade)
- ¼ cup shaved or grated Parmesan cheese
- Fresh ground pepper, to taste
🔥 Instructions:
1. Grill the Chicken:
- Preheat your grill or grill pan over medium-high heat.
- Rub chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
- Grill 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes, then slice into thin strips.
2. Make the Caesar Dressing:
- In a small bowl, whisk together egg yolk (or mayo), mustard, garlic, anchovy, and lemon juice.
- Slowly drizzle in olive oil while whisking vigorously to emulsify.
- Stir in grated Parmesan cheese.
- Taste and season with salt and pepper.
3. Assemble the Salad:
- In a large bowl, toss romaine lettuce with the Caesar dressing.
- Add croutons and Parmesan cheese.
- Top with sliced grilled chicken.
- Finish with freshly ground black pepper and a squeeze of lemon, if desired.
