French Onion Chicken Bake

Ingredients:-

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup reduced-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 4 slices reduced-fat Swiss cheese

Instructions:-

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken breasts.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  3. Add minced garlic, dried thyme, rosemary, oregano, salt, and pepper to the onions. Stir and cook for an additional 1-2 minutes until fragrant.
  4. Push the onions to the sides of the skillet and place the chicken breasts in the center. Sear each side of the chicken for about 2-3 minutes until lightly browned.
  5. In a bowl, mix the beef broth, Worcestershire sauce, and balsamic vinegar together. Pour this mixture over the chicken and onions in the skillet.
  6. Transfer the contents of the skillet (chicken, onions, and liquid) into the prepared baking dish.
  7. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
  8. Remove the foil and place a slice of reduced-fat Swiss cheese on each chicken breast. Return the baking dish to the oven and bake uncovered for an additional 5 minutes or until the cheese is melted and bubbly.
