French Onion Chicken Bake
Ingredients:-
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup reduced-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 4 slices reduced-fat Swiss cheese
Instructions:-
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken breasts.
- Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
- Add minced garlic, dried thyme, rosemary, oregano, salt, and pepper to the onions. Stir and cook for an additional 1-2 minutes until fragrant.
- Push the onions to the sides of the skillet and place the chicken breasts in the center. Sear each side of the chicken for about 2-3 minutes until lightly browned.
- In a bowl, mix the beef broth, Worcestershire sauce, and balsamic vinegar together. Pour this mixture over the chicken and onions in the skillet.
- Transfer the contents of the skillet (chicken, onions, and liquid) into the prepared baking dish.
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
- Remove the foil and place a slice of reduced-fat Swiss cheese on each chicken breast. Return the baking dish to the oven and bake uncovered for an additional 5 minutes or until the cheese is melted and bubbly.
