Diabetic-Friendly “French Fries” (Low-Carb Options)

🥦 Option 1: Crispy Zucchini Fries (Best overall)

Net carbs: ~4–6 g per serving

Ingredients

  • 2 medium zucchini, cut into fry shapes
  • 1 tbsp olive oil
  • ¼ cup almond flour or crushed pork rinds
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • Salt & pepper

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F.
  2. Toss zucchini with oil and seasonings.
  3. Coat lightly with almond flour or pork rinds.
  4. Bake 18–22 min (flip halfway) or air-fry 10–12 min until crispy.

🥬 Option 2: Rutabaga Fries (Closest to potato)

Net carbs: ~8–10 g per serving (still lower GI than potatoes)

Ingredients

  • 1 medium rutabaga, peeled & cut into fries
  • 1 tbsp olive oil
  • Salt, pepper, paprika

Instructions

  1. Parboil 5–7 minutes (key for crispiness).
  2. Drain, dry well, toss with oil & seasoning.
  3. Bake at 425°F for 25–30 min or air-fry 15–18 min.

🧀 Option 3: Halloumi Fries (Zero starch)

Net carbs: ~2–3 g per serving

Ingredients

  • Halloumi cheese, cut into sticks
  • Optional: chili powder or black pepper

Instructions

  1. Air-fry or pan-sear until golden on all sides.
  2. No oil needed—super crispy and filling.
