
Fluffy Cottage Cheese Garlic Rolls
Ingredients
Dough
- 1 cup cottage cheese (full-fat for best texture)
- ¼ cup warm milk (about 110°F / 43°C)
- 2 tbsp sugar
- 2¼ tsp active dry yeast (1 packet)
- 1 large egg
- 3 tbsp melted butter (cooled)
- 3–3½ cups all-purpose flour
- 1 tsp salt
Garlic Butter
- 4 tbsp butter, melted
- 2–3 cloves garlic, minced
- 1 tbsp chopped parsley
- ¼ tsp salt
- Optional: ¼ cup grated Parmesan
Instructions
- Activate yeast
Stir sugar into warm milk. Sprinkle yeast over top and let sit 5–10 minutes until foamy. - Blend cottage cheese
Blend cottage cheese until smooth (important for fluffy texture). - Make dough
In a large bowl, mix cottage cheese, egg, melted butter, and yeast mixture.
Add salt and flour gradually until a soft dough forms. - Knead & rise
Knead 8–10 minutes (or 5 minutes with a stand mixer) until smooth and elastic.
Place in a greased bowl, cover, and let rise 1–1½ hours until doubled. - Shape rolls
Punch down dough and divide into 12 equal pieces. Shape into balls and place in a greased baking dish. - Second rise
Cover and let rise 30–40 minutes until puffy. - Bake
Bake at 375°F (190°C) for 18–22 minutes until lightly golden. - Garlic butter finish
Mix garlic butter ingredients. Brush generously over hot rolls.
Tips for Extra Fluffiness
- Use room-temperature egg.
- Don’t add too much flour—the dough should be slightly sticky.
- Brushing butter while hot helps soak in flavor.

- Cheesy rolls: Add shredded mozzarella to the dough.
- Herb rolls: Mix rosemary or Italian seasoning into the dough.
