Fluffy Cottage Cheese Garlic Rolls

Ingredients

Dough

  • 1 cup cottage cheese (full-fat for best texture)
  • ¼ cup warm milk (about 110°F / 43°C)
  • 2 tbsp sugar
  • 2¼ tsp active dry yeast (1 packet)
  • 1 large egg
  • 3 tbsp melted butter (cooled)
  • 3–3½ cups all-purpose flour
  • 1 tsp salt

Garlic Butter

  • 4 tbsp butter, melted
  • 2–3 cloves garlic, minced
  • 1 tbsp chopped parsley
  • ¼ tsp salt
  • Optional: ¼ cup grated Parmesan

Instructions

  1. Activate yeast
    Stir sugar into warm milk. Sprinkle yeast over top and let sit 5–10 minutes until foamy.
  2. Blend cottage cheese
    Blend cottage cheese until smooth (important for fluffy texture).
  3. Make dough
    In a large bowl, mix cottage cheese, egg, melted butter, and yeast mixture.
    Add salt and flour gradually until a soft dough forms.
  4. Knead & rise
    Knead 8–10 minutes (or 5 minutes with a stand mixer) until smooth and elastic.
    Place in a greased bowl, cover, and let rise 1–1½ hours until doubled.
  5. Shape rolls
    Punch down dough and divide into 12 equal pieces. Shape into balls and place in a greased baking dish.
  6. Second rise
    Cover and let rise 30–40 minutes until puffy.
  7. Bake
    Bake at 375°F (190°C) for 18–22 minutes until lightly golden.
  8. Garlic butter finish
    Mix garlic butter ingredients. Brush generously over hot rolls.

Tips for Extra Fluffiness

  • Use room-temperature egg.
  • Don’t add too much flour—the dough should be slightly sticky.
  • Brushing butter while hot helps soak in flavor.

Variations

  • Cheesy rolls: Add shredded mozzarella to the dough.
  • Herb rolls: Mix rosemary or Italian seasoning into the dough.
  • Make-ahead: Refrigerate shaped rolls overnight and bake fresh.
