- 2โ3 tbsp sweetener (erythritol, monk fruit, or stevia, adjust to taste)
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt

1. Preheat oven
- Preheat oven to 175ยฐC (350ยฐF). Grease or line a small 8-inch cake pan.
2. Mix wet ingredients
- In a bowl, whisk eggs, Greek yogurt, lemon juice, zest, sweetener, and vanilla extract until smooth.
3. Add dry ingredients
- Gently fold in almond flour, protein powder, baking powder, and salt until fully combined.
- Batter will be slightly thick but pourable.
4. Bake
- Pour batter into the prepared pan.
- Bake 20โ25 minutes until the center is set and a toothpick comes out clean.
5. Cool & serve
- Let cake cool 10 minutes in pan, then transfer to a wire rack.
- Slice into 8 pieces. Dust with powdered erythritol if desired.
