  • 4 large eggs
  • 1/2 cup Greek yogurt (non-fat or low-fat)
  • 1/4 cup almond flour
  • 1/4 cup vanilla or unflavored whey protein powder
  • 2โ€“3 tbsp lemon juice (fresh)
  • 1 tsp lemon zest
  • 2โ€“3 tbsp sweetener (erythritol, monk fruit, or stevia, adjust to taste)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Optional: dust with powdered erythritol for serving

1. Preheat oven

  • Preheat oven to 175ยฐC (350ยฐF). Grease or line a small 8-inch cake pan.

2. Mix wet ingredients

  • In a bowl, whisk eggs, Greek yogurt, lemon juice, zest, sweetener, and vanilla extract until smooth.

3. Add dry ingredients

  • Gently fold in almond flour, protein powder, baking powder, and salt until fully combined.
  • Batter will be slightly thick but pourable.

4. Bake

  • Pour batter into the prepared pan.
  • Bake 20โ€“25 minutes until the center is set and a toothpick comes out clean.

5. Cool & serve

  • Let cake cool 10 minutes in pan, then transfer to a wire rack.
  • Slice into 8 pieces. Dust with powdered erythritol if desired.
