Filling Sweet potatoes

Ingredients:
- 4 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup mushrooms, chopped
- 1 cup cream cheese, softened
- 1/2 cup grated cheese (like Parmesan or cheddar)
- 1/4 cup milk
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork. Place them on a baking sheet and bake for about 45-60 minutes until tender.
- While the sweet potatoes are baking, heat a bit of olive oil in a pan over medium heat. Add the chopped mushrooms and sauté for about 5-7 minutes until soft.
- Add the minced garlic and fresh spinach to the pan. Cook until the spinach wilts, about 2-3 minutes.
- In a large bowl, mix the cooked mushrooms and spinach with the cream cheese, grated cheese, and milk. Stir until well combined. Season with salt and pepper to taste.
- Once the sweet potatoes are done, let them cool slightly before slicing them open.
- Spoon the creamy mushroom and spinach mixture into each sweet potato half.
- Optionally, sprinkle a little extra cheese on top and return them to the oven for an additional 10 minutes to warm through and melt the cheese.
- Serve warm and enjoy!
