Filling Sweet potatoes

Ingredients:

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup mushrooms, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated cheese (like Parmesan or cheddar)
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them with a fork. Place them on a baking sheet and bake for about 45-60 minutes until tender.
  3. While the sweet potatoes are baking, heat a bit of olive oil in a pan over medium heat. Add the chopped mushrooms and sauté for about 5-7 minutes until soft.
  4. Add the minced garlic and fresh spinach to the pan. Cook until the spinach wilts, about 2-3 minutes.
  5. In a large bowl, mix the cooked mushrooms and spinach with the cream cheese, grated cheese, and milk. Stir until well combined. Season with salt and pepper to taste.
  6. Once the sweet potatoes are done, let them cool slightly before slicing them open.
  7. Spoon the creamy mushroom and spinach mixture into each sweet potato half.
  8. Optionally, sprinkle a little extra cheese on top and return them to the oven for an additional 10 minutes to warm through and melt the cheese.
  9. Serve warm and enjoy!

Tip: You can customize the filling with any other veggies or spices you love!
