Fiesta salad


Ingredients:
Brown basmati, 3cups cooked
Black beans (1 can rinsed)
4 Shredded carrots
Seared corn (1 cob or 1c frozen)
Cilantro (1/2 c)
1 Red pepper diced
Grape tomatoes (1 c, quartered)
Dress generously with 1/4c olive oil, 1/4 c lime juice and black pepper.
-Great with avocado in a wrap.
-serve drizzled with chipotle “mayo” if you need something richer tasting
